Peanut Cracker Dippers

8 ounces chocolate candy coating, cut up
48 Ritz crackers
1/2 cup peanut butter

Melt chocolate coating in medium saucepan over low heat, stirring constantly.

Using half of the crackers, spread 1 tsp. peanut butter on each; top with another cracker.

Using tongs or 2 forks, dip each cookie into chocolate. Place on wire rack over waxed paper. Cool completely.

Makes 24.
